QUICK + EASY CHICKEN SOUP
Ingredients:
(2) chicken breasts
(1) onion
(3) garlic cloves
(3) free range chicken broth containers from @traderjoes
1 cup of water / pasta water
(3) celery
(3) carrots
1 cup of spinach
1/2 cup of parsley
Extra virgin olive oil
Mini macaroni noodles
1 fresh block of parmigiano reggiano
Garlic powder / garlic salt
Fresh ground black pepper
Fresh ground sea salt
(1) chicken bouillon tablet, optional
Directions:
Sauté chopped veggies, garlic and onion in olive oil until lightly golden.
Add chix broth + cup of water / pasta water.
Once liquid is boiling, add cut chicken breasts.
Sprinkle in chopped parsley and spinach. Season to taste.
Reduce + cook on low, covered for 2 hours.
Cook mac noodles separate.
Serve soup in bowl with a handful of mac noodles, freshly grated parm, a splash of olive oil, and salt + pepper to taste.
