QUICK + EASY CHICKEN SOUP

Ingredients:

  • (2) chicken breasts

  • (1) onion

  • (3) garlic cloves

  • (3) free range chicken broth containers from @traderjoes

  • 1 cup of water / pasta water

  • (3) celery

  • (3) carrots

  • 1 cup of spinach

  • 1/2 cup of parsley

  • Extra virgin olive oil

  • Mini macaroni noodles

  • 1 fresh block of parmigiano reggiano

  • Garlic powder / garlic salt

  • Fresh ground black pepper

  • Fresh ground sea salt

  • (1) chicken bouillon tablet, optional

Directions:

  • Sauté chopped veggies, garlic and onion in olive oil until lightly golden.
  • Add chix broth + cup of water / pasta water.
  • Once liquid is boiling, add cut chicken breasts.
  • Sprinkle in chopped parsley and spinach.  Season to taste.
  • Reduce + cook on low, covered for 2 hours.
  • Cook mac noodles separate.
  • Serve soup in bowl with a handful of mac noodles, freshly grated parm, a splash of olive oil, and salt + pepper to taste.
