EASY ROASTED CHIX

Ingredients:

  • (2) Roasting chickens

  • (6) tablespoons of butter, sliced

  • Extra virgin oil

  • (1) 32 oz chicken broth

  • Fresh Rosemary

  • Fresh Thyme

  • (1/2) Yellow onion

  • Garlic powder

  • Seasoning salt / fresh ground sea salt

  • Fresh ground pepper

  • Dried parsley

Directions:

Pre-heat oven to 375/400 degrees
  • Place the two (2) chickens in a roasting pan.
  • Drizzle a healthy pour of olive oil on top.
  • Cut the onion into two large halves and stick one half in each of the chickens.
  • Season chicken, starting w/ garlic powder, then seasoning salt / sea salt, pepper and parsley; make sure to season the top, side and inside.
  • Place the fresh herbs on top, on the side, and around the chicken
  • Pour half of the chicken broth on the perimeter of the pan.
  • Add sliced butter and a few fresh herbs on top of chicken.
  • Finish with another few drizzles of olive oil.
  • Place in oven, without lid. 
  • Cook for 1.5-2 hours continuously basting every 30 mins. Add more chicken broth if necessary along the way.
  • Then, cook chicken for another 30 mins covered.
