EASY ROASTED CHIX
Ingredients:
(2) Roasting chickens
(6) tablespoons of butter, sliced
Extra virgin oil
(1) 32 oz chicken broth
Fresh Rosemary
Fresh Thyme
(1/2) Yellow onion
Garlic powder
Seasoning salt / fresh ground sea salt
Fresh ground pepper
Dried parsley
Directions:
Pre-heat oven to 375/400 degrees
Place the two (2) chickens in a roasting pan.
Drizzle a healthy pour of olive oil on top.
Cut the onion into two large halves and stick one half in each of the chickens.
Season chicken, starting w/ garlic powder, then seasoning salt / sea salt, pepper and parsley; make sure to season the top, side and inside.
Place the fresh herbs on top, on the side, and around the chicken
Pour half of the chicken broth on the perimeter of the pan.
Add sliced butter and a few fresh herbs on top of chicken.
Finish with another few drizzles of olive oil.
Place in oven, without lid.
Cook for 1.5-2 hours continuously basting every 30 mins. Add more chicken broth if necessary along the way.
Then, cook chicken for another 30 mins covered.
