spicy fusilli // Jon & vinny’s style

Ingredients:

  • (1) large garlic clove, finely chopped

  • (1) shallot, finely chopped

  • (1/2) cup of tomato paste

  • (1) cup of half & half milk/heavy cream

  • (2) tablespoons of vodka

  • (2) tablespoons of butter

  • (1) cup of reserved pasta water**

  • (1/2) cup of fresh basil, chopped

  • (1/2) cup of fresh parmesan reggiano, finely grated

  • (1) lb of fusilli pasta noodles

  • (1/2) cup of olive oil

  • fresh ground sea salt

  • fresh ground pepper

  • (1) teaspoon of red pepper flakes (optional)

Directions

  • Bring a pot of generously salted water to a boil; add 1-2 tablespoons of olive oil.
  • Add fusilli noodles + cook al dente, reserving 1 cup of pasta water.**
  • Separately in a dutch oven or deep skillet, add olive oil, chopped garlic and shallot;  sauté until soft.
  • Add tomato paste, stir + cook for 3-5 minutes on low/medium heat.  
  • Pour in vodka, cream + stir.
  • Add red pepper flakes (optional), + stir.  
  • Lightly season with fresh ground salt and pepper.
  • Add drained, cooked fusilli noodles, butter, reserved pasta water and stir.
  • Pour in half of the grated parm + stir.
  • Taste + add additional salt and pepper, if necessary.
  • Serve, topping with the remaining freshly grated parm + basil.
