Smothered turkey wings/legs
Ingredients:
(2-4) lbs of turkey wings or legs
(8) cloves of chopped fresh garlic
(2) onions, sliced
(1) can of cream of celery
(1) can of cream of chicken
(1) 32 oz container of chix broth
Sea salt / seasoning salt
pepper
garlic powder
smoked paprika
flour
(1) stick of butter
olive oil
fresh parsley
(2) bay leaves
(1) sprig of fresh rosemary
(2) sprigs of fresh thyme
Directions
Pre-heat oven to 350 degrees.
Clean and pat the turkey leg/wing dry in a bowl.
Season the turkey with sea salt, pepper, garlic powder and smoked paprika.
Pour in approximately 5 tablespoons of olive oil and rub into the seasoned turkey.
Melt half a stick of butter in a roasting pan covering two burners, then add in seasoned turkey; brown each side of the meat (for a few minutes) and set aside in a separate bowl.
Add in the remaining half a stick of butter to the roasting pan. Once the butter begins to bubble, add in the sliced onions and chopped garlic. Season with additional sea salt, pepper, garlic powder and smoked paprika. Stir around for a few minutes, until onions are translucent.
Sprinkle in a few (3-4) tablespoons of flour. Stir around in onions/garlic, until the entire mixture is colored light brown.
Slowly pour in the chicken broth, continuously stirring as you pour; bring to a light boil.
Then, slowly add in cream of chicken and cream of celery, also making sure to stir as you add.
Add the turkey legs/wings back into the pan, ensuring that the broth covers at least half way to the top of each wing/leg. Add more chicken broth, if needed.
Add in fresh herbs on top, and cover with roasting pan lid.
Cook covered at 350 degrees for one hour. Stir, then cook for an additional hour (also covered).
Cook uncovered for an additional 20 minutes at the the end.
Serve with mashed potatoes and a veggie!
ENJOY!
