GRILLED SALMON

Ingredients:

  • (1) Pack of boneless salmon (from trader joe’s)

  • Extra virgin olive oil

  • ground sea salt / garlic salt

  • ground pepper

  • Fresh arugula

  • Cooked quinoa

  • Freshly grated parmigiana reggiano

  • Rosé Salad dressing (from trader joe’s)

Directions:

  • Season salmon and drizzle with olive oil.
  • In a skillet, add 1 or so additional tablespoons of olive oil.
  • Add salmon.  Cook on each side, cooking high at first to get a good crisp edge on both sides, then reducing down to low ensuring that the middle is fully cooked.  
    Tip: add a flat pan on top of fish at the end as it cooks on low to ensure fish is fully cooked at center.  Do not overcook, to where you start to see white from the fish.

    SALAD
  • In a bowl, add fresh arugula, cooked quinoa, and grilled salmon. 
  • Sprinkle with freshly grated parmesan and drizzle with plenty of Rosé Trader Joe’s salad dressing.
  • As always, serve with a nice glass of red cab/white wine.
    PLATE
  • Service over rice and broccolini, w/ a tad of soy sauce.
