CHILE COLORADO

Ingredients:

  • (2) Angus beef stew meat (Trader Joes has a good option)

  • (1/2) onion

  • (2) garlic cloves

  • Chile Powder

  • Cumin Garlic Powder

  • Seasoning Salt/Fresh Ground Salt

  • Fresh Ground Pepper

  • Oregano

  • (1) 32 oz of Chicken Broth

  • Olive oil

Directions:

  • Sauté chopped onion and garlic in olive oil.
  • Add in stew meat. Season with all seasonings, stirring as you add.
  • Sir the meat more, while cooking on medium to high heat.
  • Once brown, turn down heat and add in chicken broth (about half).
  • Add additional Chile powder (and other seasonings listed above) to create desired broth color. Smell it to determine the taste / taste test once meat is fully cooked.
  • Cook on low, covered for about 1 hour. Do another taste test. Add additional chicken broth and water if needed.
  • Cook for another hour or so until meat is fully tender.
  • Serve with rice, beans and chips or use to make red meat burritos.  Enjoy!
