Olive oil
*Double the quantities above for a larger portion / 2 batches. Great for leftovers.
Directions:
Preheat oven to 375.
Season meat w/ garlic powder, seasoning salt, touch of sea salt, + pepper. Sprinkle fresh chopped thyme and parsley.
In your roasting pan, and on top of stove, heat olive oil over medium heat.
Brown your seasoned short ribs, browning each side for about 2-3 mins or until they're a nice medium golden tone.
Set ribs aside in a bowl/plate.
Turn down heat slightly, add in quartered onion, chopped garlic and more fresh herbs; sauté for a few mins.
Add in celery and carrots; sauté for 5 or so mins.
Add tomato paste, wine, broth, thyme and bay leaves; stir until paste is dissolved.
Add back short ribs. Make sure they’re spread out and covered half way up by liquid. If not, add additional broth.
Cover pot, and put in oven for 2.5-3 hours, consistently basting about every 30 mins.
