BRAISED SHORT RIBS

Ingredients:

Whole Foods, Bristol Farm and Ralph’s are typically good stores to buy the short ribs.

  • (6) short ribs

  • (2) celery sticks, chopped in half

  • (2) carrot sticks, chopped in half

  • (1) large onion, cut in 4 quarters

  • (4) garlic cloves, chopped

  • Fresh thyme

  • Fresh rosemary

  • Fresh/dried parsely

  • (2) bay leaves

  • (1) cup of chicken broth 

  • (1) cup of beef broth 

  • (2) cups of dry red wine

  • (2) tablespoons of tomato paste 

  • Garlic powder

  • Seasoning salt

  • Fresh ground sea salt

  • Fresh ground pepper

  • Olive oil 

    *Double the quantities above for a larger portion / 2 batches. Great for leftovers.

Directions:

Preheat oven to 375.
  • Season meat w/ garlic powder, seasoning salt, touch of sea salt, + pepper. Sprinkle fresh chopped thyme and parsley.
  • In your roasting pan, and on top of stove, heat olive oil over medium heat. 
  • Brown your seasoned short ribs, browning each side for about 2-3 mins or until they're a nice medium golden tone.
  • Set ribs aside in a bowl/plate.
  • Turn down heat slightly, add in quartered onion, chopped garlic and more fresh herbs; sauté for a few mins.
  • Add in celery and carrots; sauté for 5 or so mins.
  • Add tomato paste, wine, broth, thyme and bay leaves; stir until paste is dissolved.
  • Add back short ribs. Make sure they’re spread out and covered half way up by liquid. If not, add additional broth.
  • Cover pot, and put in oven for 2.5-3 hours, consistently basting about every 30 mins.
